I had to share this stuffing recipe with all you ladies.
My family went nuts for it on Thanksgiving.
It is so tasty, and if you like stuffing,
you don't need to make a turkey to have it!

INCREDIBLE SAUSAGE STUFFING
Makes about 15-20 servings

16 cups whole wheat bread, cubed
(I used Jack Sprat and mixed some white bread in also)
12 oz. bulk sausage (1/2 Jimmy Dean Sage and 1/2 Country Mild)
1 stick Butter
4 celery stalks - chopped. Use leaves also.
2-3 onions - chopped
2-3 cloves garlic - minced
3 golden delicious or Macintosh apples - peeled and chopped
(I used both)
2 T. poultry seasoning - or to taste
1 1/2 to 2 cups fat free/reduced sodium chicken broth.
(Note-If cooking stuffing with a turkey, put turkey neck and giblets in chicken broth and simmer while preparing remaining ingredients.
Adds great flavor to broth)
Salt and fresh ground pepper to taste (I use coarse kosher or sea salt)

Heat oven to 350.
Bake bread on a baking sheet
8 cups at a time until lightly toasted.
15-20 minutes.
Heat skillet over medium and cook sausage until it's not pink.
Drain in colander.
Set aside.
Heat butter over medium low.
Add celery, onions and garlic.
Saut� 5 min. till soft.
Add apples and cook 8-10 min. or till tender.
Put onion/apple mixture in crock pot.
Add sausage, toasted bread and poultry seasoning.
Toss well.
(You could add more or less bread, however you like).
Drizzle 1 1/2 cups chicken stock over mixture.
Toss until evenly moistened. Add more broth if necessary.
Season with kosher salt and fresh pepper to taste.
Cook on low in crock pot approximately 4 hours.
Half way through, stir stuffing and taste.
If necessary, add more poultry seasoning and/or salt/pepper.

Canada Mel

Chocolate Turtle Pie

Crust:
2c chocolate cookie crumbs
1/4c butter/margerine melted
(or use a chocolate graham cracker crust)

Filling:
1c caramel candies (20)
1/4c heavy whipping cream
1/2lb. pecan pieces

Topping:
3/4c semi-sweet chocolate chips
1/4c whipping cream

1) First, preheat the oven to 375.
Make the crust, by combining the crumbs
with the melted butter.
Press into a pie dish.
Bake 10 minutes.
Let cool

2)Next, melt the caramels over low heat.
Stir in the cream, continue stirring until well mixed.
Remove from the heat and stir in the pecans.
Spread this mixture into the crust.
Let cool in the refridgerator for at least 10 minutes.

3)Melt the chocolate chips over low heat.
Stir in the cream, continue stirring until well mixed.
Pour over the pie.
Cool one hour, then enjoy!!

Berry Blender - Recipe

This is the greatest Vit.C drink ever!
Just take all of your favourite
fruits chopped and peeled,
place them in the blender with some orange juice
and some yogurt (if you so desire) and blend!!
This drink is soooo yummy when cold.
Add some crushed ice or use frozen berries
to make it like a great shake!

My favourite combination:
5 strawberries
Handful of blueberries
Handful of raspberries
1 naval orange
1 banana
1 small fruit-on-the-bottom low fat yogurt (any flavor) *optional
2 kiwis
Dash of Ginger
Dash of Mint Flakes
Blend!
Enjoy!

This is DH's recipe for
Oatmeal chocolate chip cookies
that are sooooo yummy!

3/4 cup vegetable shortening
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1/4 cup water
1 tsp. vanilla
3 cups oats, uncooked
1 cup all-purpose flour
(+ 1/2 to 1 cup more if you like thicker cookies)
1 tsp. salt
1/2 tsp. baking soda
1 bag 12 oz. chocolate chips

Beat shortening, sugars, egg, water,
and vanilla until creamy.
Add oats, flour, salt and
baking soda and mix well.
Stir in chocolate chips.
Drop by spoonfuls onto ungreased
baking sheet and
bake at 350F for 12-15 min.
Makes 2-3 dozen.

Here's a dessert that will help those AF blues!

Caramel Brownie Yummy Bars

1 package german choc. cake mix
2- 1/3 cups of evaporated milk
3/4 cup melted butter
1 package of caramels (wrapped kind)
1/2 chopped peacans
6 oz. choc. chips

Mix cake mix, 1/3 cup of milk and butter. put half of it in a 9x9 cake pan.
Bake 8-10 minutes at 350.
Let cool.
Sprinkle pecans and choc. chips on cooled cake.
Melt caramels and 1/3 cup of milk and drizzle over cake.
Put the rest of the batter on top of the cake,
but in sections so caramel can show through.

Bake 10-15 minutes.
Let cool.
Cut into 2x2 squares.

These are great frozen.

TRIPLE CHOCOLATE MESS (for the crockpot)

1 package chocolate cake mix
1 pint sour cream
1 package instant chocolate pudding
1 small bag chocolate chips
3/4 cup oil
4 eggs
1 cup water

Spray crockpot with non-stick spray.
Mix all ingredients.
Pour into crockpot.
Cook on low for 6-8 hours.
Serve in a bowl with ice cream.

Golfer's Chicken

4 to 5 lbs chicken thighs (or breasts)
1 packet onion soup mix
1 bottle Russian dressing
1/2-1 jar apricot jam

Mix last 3 ingredients, pour over chicken.
Cook in crockpot for
6-8 hrs on LOW or 4-5 hours on High.

Serve over rice or noodles.

I broke up the chicken meat
about a half hour before it was done. YUM!

I tried a "new" easy crockpot thing:

1 - 1 1/2 stew meat.
One can cream of mushroom soup ( I used two)
1/4 cup water
One envelope onion soup mix.

Put it all in there and cook for 6 -8 hours.

Wonderful over noodles.
